AFAIK a Visor's color/grayscale depth only affects the image quality as viewed on the Visor's screen; the Eyemodule application writes the color (or monochrome) information captured to a PDB file, which is then converted to Jpeg images the next time the Visor is hotsynced.
So even if your particular Visor can't display 16 bit color or 4 bit grayscale, the same amount of information is still captured by the springboard module... the color/grayscale depth of the device doesn't matter.
I upgraded from a Visor Deluxe to a Prism, and I didn't notice any difference in image quality from the Eyemodule.
