Better way?
I've got to think that someone at some point has gone across the channel in a traditional hangglider. Nothing extreme like this guy. Just go up in a hot air balloon, and after a scary few second of trying to right the glider, you should be off and running. I doubt the updrafts are that great going across water, but the decline rate would be so much less that you wouldn't have to go nearly as high to begin. Of course, that wouldn't have been nearly as cool or resulted in a look that comes from a Disney movie.
