How do I avoid the transfer of all my emails from my desktop to my visor? Can I somehow designate one folder only for the sync?

This is largely dependant on what e-mail software is being used.

If you are using the basic mail app and not a pop-mailer or such, then I would suggest using autoarchive to move mail older than x Days out of the inbox. other options exist, also how many e-mails are you getting daily?
