What's the best way to transfer my data from the Palm Desktop to Outlook 2000? I've tried exporting the data to a csv file then importing into Outlook, but I don't get the field headers so I can name the fields. Is there an easy way?

You might try this:

Have Palm Desktop setup as your sync. Synchronize, then reinstall the software and use PocketMirror to sync with outlook. This way, all of the information is transfered into Outlook.

I have done this, successfully.

If you want to do this transfer and you already have PocketMirror installed, change your sync settings to "Quick one-time action setup" "Restore from Palm Desktop Files". Then do "Quick one-time action setup" "Handheld overwrites Outlook".
