To change which item (Work Phone, home phone, etc) appears in the list, open the record for editing and press the Details button. Use the Show In List setting to set which field (Work, Home, Fax, Other, Email)appears in the list. By default, if only one field (ie email) is defined, that is what shows in the list.
You can check page 112 of the User Guide for more specifics.
