For CDMA (Sprint/Verizon):
NYSEBull provides cables the directly connect Motorola StarTAC & Timeport phones. Another company is also producing them (Search the boards for the name, supposed to be avilable the next coming weeks). He, as well as this site, are working on a cable for some Samsung phone and he is also working on a cable for the Kyocera (Qualcomm) Thin Phone (860/1960/2760). Hes delayed these cables though because of connector shoratages (Bummer ).
For most other data cpable phones you can, as mvogeli said, purchase a data cable (anywhere from $30-$130) and connect it to a serial cable. You'll also need a null modem adapter inbetween ($5). MarkSpace offers a modem cable with a built in null modem adapter for $35, with plans to offer a short 6-inch version soon specifically for cell phone users.
The speed limit is 14.4k on current CDMA networks (Sprint & other of the next couple of years will roll out upgraded networks with things like CDMA2000 which feature minimum connection speeds of 56k, but this will be a while in America & could possibly require new phones(?) for full roll out)
For GSM (Cingular):
Its my understanding that everyone one of these phones is data capable. Some, like the previously mentioned Nokia, feature IR. Others, such as some Ericsson, can add IR through an adapter. I believe some have serial cables that can connect similar to the above data cable -> Null Modem -> Serial cable (But don't hold my word to that). Xircom also offers data cables for GSM phones that connect to their modem.
GSM is indeed 9600.
