How do I create them new (datestamp, timestamp etc.=

I'm not positive this will work but you can try to locate a file named Graffiti_ShortCuts_.PRC in your <user>\Backup directory and re-install it to the Visor.

As a last resort, a hard reset will restore the default shortcuts as well. Remember though, you'll lose all your data this way if you're not using a backup solution.
