I am wondering if I am going to be able to use my Visor to connect to my office's LAN via modem the way I can with my PC.

We use a RAS to connect but I have software on my PC which I use to connect. I would be connecting to MS Outlook to download e-mails and appointments.

PocketMirror might do what you want. Check out http://www.chapura.com/pocketmirrorfeatures.html for details. I haven't used it myself. You may also want to check the PalmGearHq site at http://www.palmgear.com/ for other similiar packages. (That is where I found PocketMirror)
