How and or where do I set the snooze settings. I have found the alarm preferences, but the manual shows snooze setting that I have been unable to locate. Any help would be appreciated.

You need to run Date Book+ to get the snooze alarms -- not the default Datebook application.

Run Date Book+, tap Menu icon, tap Options, tap Default Date Book, tap Date Book+, tap OK.
