If you have an e-mail program that is not fuly compatible with the Pal OS, this will cause a delay or lock up.
Go to Hot Synch on the tool bar and choose custom. If you want to get rid of the e-mail issue completely, go to mail and choose do nothing and set it as the default. If you wish to continue to use the e-mail, you need to customize your e-mail set up.

Here's another possibility: I get mail on a Novell Groupwise system, and we have a couple of mailing lists that are about 2000 names long. If I didn't manage my inbox and tried to sync an email that had been sent this way, though my *email* system reported "To:" as "staff", when it synchronized, it would try to send the entire list of 2000 names. This would cause my hotsync to fail out. If I went back into my mailbox and deleted these big lists, I'd sync, no problem.

Sounds, though, like you have at least a partial sollution already. If you want to sync your mail, and have a situation like the one I described above, you might give that a try.
