Thorin,
If you want an American car for $1-1.5K, that is easy to work on (cheap, easy to find parts) that is also fast as a rocket sled, think about Thunderbird, Cougar, or even the infamous Camaro (preferably in a faded *****in' red).
Another way to get muscle is to get an old police car. These would most likely be a Caprice Classic or a Crown Vic. Not exciting cars in their normal form, but the cop cars are juiced with outstanding suspensions and typically modified engines. There is something very cool about driving around in one of these.

Do files get embarrassed when they get unzipped?
Seriously I had three cars in mind for you.
#1) CRX : Only a two seater which is rough if its your only car but it is sweet. When I bought my 1987 Mustang LX 2.3 Liter, 4 Cylinder, 5 Speed Manual Hatchback (yes just like the one you have posted about), I seriously considered a CRX. It came down to the fact that I was in college and wanted to transport more than just myself and one other person and I also needed to get my stuff back and forth to school.
BTW, I liked my Mustang, I swapped the wheels for the bigger 15" GTs and it was well worth the price, it improved the handling immensely but there is not getting over the fact that it is a mediocre performing car, bad in snow, and higher insurance regardless of engine size just because it is a Mustang!
#2) Mazda Protege AWD Hatch : this is a nice car and the only made the AWD in the late 80s and early 90s. Has an aggressive look, a little pep, and the benefit of AWD which will serve you well in the great white north! **I would buy a new Protege tomorrow if they still made the AWD version**
#3) Mazda RX-7 : If you are going to consider the CRX and its two seats, you should also consider this baby. It unfortunately has rear wheel drive but this car performs and you will have a hard time killing a rotary engine!

Who/What Exactly Is a Rice-Boy?
Rice-Boy is a stereotype. The typical Rice-Boy can be identified by his car, or rather what he does to it. Generally, Rice-Boy will start out with a car that was not meant to go fast (typically a Honda Civic), and attempt to "fix it up," usually consisting of aftermarket rims, lowering springs and an aftermarket exhaust system with a large exhaust tip.
Most Rice-Boy cars (or "Rice Rockets") have the usual complement of stickers proudly displaying features that the car might or might not have, most notably, the Honda VTEC sticker from the later model Preludes, and the plaques from the later model Integras.
Rice-Boys do not exclusively drive Japanese cars. There are quite a few fake Mustang '5.0's and Camaro Z28's out there, as well as quite a few strange looking Neons.
