I have not ordered a Visor yet, but I understand there is a built in microphone in the units. Can one record messages with it out of the box or does one need to get software or a springboard module to utilize it?

The Visors have a built-in microphone, but that microphone serves no purpose without a Springboard module that can make use of it. Currently no modules exist which do make use of it. None of the Palms or TRGpro have a microphone.

The Visor does have a built-in microphone, but it's not connected to anything; it will need a springboard to utilize it. Innogear's SixPak will have a voice recorder among its six devices. Handspring's Springboard News page list two dedicated (presumably cheaper) voice recorders, but both I couldn't find any information from the links to the respective companies' websites.
