So you have a pretty good range of choices (as long as your carrier offers these models).
Re: wireless web minutes, yes, 180 minutes is total for voice and wireless combined. If I go over, I am charged per minute, though I don't know what the charge is.
And, re: your stowaway concern, I'm beginning to see how you and I differ in terms of our needs. I can't stand carrying a keyboard around. I had one of the original thinkoudside models for the Palm IIIx, and, while I thought it was nicely designed and worked well, I just didn't use it. I've become proficient with Graffiti and use if for all my text entry. Now, if you're talking about writing LOOONG e-mails, then I can see where the Stowaway would be preferred.
