The simplest possible way would be to cut & paste a simplified, plain text version of your resume into memo pad - I did this when job hunting last year, but I never had occaision to demonstrate my geeky cleverness to prospective employers. Still, you never know who you'll run into whether you're actively looking for a job or not, and it has the potential to impress the heck out of the right sort of person. 
You could also convert a web-based resume into an iSilo document, and keep it on your visor... or you could create a custom avantgo channel, and link to it from your regular online resume.
Just like the Boy Scout motto says, 'Be Prepared.'
