I've not tried BeamSync, but you can certainly make a Deluxe talk to a proper IR modem via IrLink. That said, there are situations where OS 3.1's TCP stack seems to be lost in a world of its own, at least as far as keeping up a conversation with the IR port goes. The upshot of that is that some programs end up losing the connection, because the Visor doesn't talk to the phone to keep it up. Main offenders that I've found are AvantGo Connect, Eudora and Eudora Web. The first version of Blazer did it too - I never even got to sign on with it!
But Blazer 2, ProxiMail, MultiMail III, ICQ, and PalmVNC certainly all behave well via IR on OS 3.1.
As for whether it will work with the 3360 - if the modem responds to standard AT commands, which most of the modems in Nokia phones do, then it should work. But you'll also need to make sure you have made whatever arrangements are necessary with the cellular carrier to have data enabled.
